white peony is a white tea from fujan, china that has springy, natural notes of honeysuckle. we let this ferment with kombucha starter until the balance of sweetness and acidity complimented the lemongrass, hay-like notes. the acidity from the fermentation gives it a peach taste, to our buds. light, refreshing, on the dry-er side - this is a great option for a big summertime spread.
